Requirements (Instruments, Chemicals & Other) :

1. Eggs
   
2. Analytical Balance
   
3. Beaker
   
4. Measuring cylinder
   
5. Distilled water
   
6. Test tubes

Procedure :

1. Take three eggs and make a fine hole to collect egg albumen in a 50 ml beaker.
   
2. Measure 5 ml of egg albumin using measuring cylinder and pour in each of the six test tubes labelled T1, T2, T3, T4, T5 and T6.
   
3. Heat the test tube T1, T2, T3, T4, T5 and T6 in a water bath maintained at 40, 50, 60, 70, 80 and 90°C respectively for 5 min.
   
4. Invert the test tubes and observe the visual changes.
