Study of some reactions of proteins
Requirements (Instruments, Chemicals & Other) :
- Eggs
- Analytical Balance
- Beaker
- Measuring cylinder
- Distilled water
- Test tubes
- Water Bath Machine
Procedure :
- Take three eggs and make a fine hole to collect egg albumen in a 50 ml beaker.
- Measure 5 ml of egg albumin using measuring cylinder and pour in each of the six test tubes labelled T1, T2, T3, T4, T5 and T6.
- Heat the test tube T1, T2, T3, T4, T5 and T6 in a water bath maintained at 40, 50, 60, 70, 80 and 90°C respectively for 5 min.
- Invert the test tubes and observe the visual changes.
